Coming up with healthy, filling meals for you and your family on an average day can be challenging; between school and work schedules, extra curricular activities, errands, chores and trying to fit in quality time, it can be tough to set aside the time to plan meals. Now add in the stresses of moving into and/ or out of a new home! Generally most things will be packed up in your house in the last few weeks before the big moving date, but buying dinner out can get very expensive, very quickly. Gemelli With Broccoli, Bacon & Chickpeas – You can’t go wrong with a veggie loaded pasta dish that has bacon in it! Light, delicious, healthy and quick! Toss it with cheese if you have some in your fridge!

Baked Coconut & Lime Rice Pudding – For something on the sweet side, this dish uses the basics you keep in your fridge such as butter, milk and cream and can also help you get rid of your rice, fresh fruit and dried nuts!

Southwestern Omelet – You can substitute and add so many of your favourite omelet staples for this one, but best of all, it’s super quick and easy!

Zucchini & Tuna Pappardelle – Cans of tuna are something I tend to stock pile. It’s makes for a fast sandwich filling, something delightfully salty to add to an alfredo pasta or just a great snack when you’ve run out of real food! This recipe is and delicious with plenty of areas for substituting whatever you may have left in your cupboard!
